I purchased this knife to process my game meat. I do all my own processing. Recently I processed an antelope and the knife did a great job. It’s easy to hold even when wet and with latex gloves on. It was quick and easy to touch the edge up one time while doing the processing. The blade has just enough flex making it easy to follow along the edge of a bone.
